Cajun Chicken Pasta

Ingredients

  • 1 tbsp Olive Oil
  • 1 Large Zucchini (diced)
  • 1 Large Chicken Breast (cut into small pieces)
  • 2 Chorizo (sliced)
  • 1 Large Capsicum (diced)
  • 2 tsp Garlic
  • 2 tbsp Pavs Pantry Cajun Seasoning
  • 100g Tomato Paste
  • 600ml Thickened Cream
  • 3 Cups Penne Pasta
  • Grated or Shaved Parmesan

Method

  1. Bring a large saucepan of water to the boil.
  2. Cook the pasta per the instructions on the packet.
  3. Drain and set aside.
  4. In the same saucepan heat the olive oil and add the chicken, chorizo, zucchini and capsicum.
  5. Once the chicken is evenly coloured add the garlic and stir for 2 minutes.
  6. Then add the Pavs Pantry Cajun Seasoning and tomato paste into the mix, stirring it until the chicken is evenly coated.
  7. Once the chicken is coated add the cream and reduce the cream until it is a nice saucy consistency.
  8. Lastly stir through the pasta and serve.
  9. Garnish with as much parmesan as desired.
