Cajun Chicken Pasta
Ingredients
- 1 tbsp Olive Oil
- 1 Large Zucchini (diced)
- 1 Large Chicken Breast (cut into small pieces)
- 2 Chorizo (sliced)
- 1 Large Capsicum (diced)
- 2 tsp Garlic
- 2 tbsp Pavs Pantry Cajun Seasoning
- 100g Tomato Paste
- 600ml Thickened Cream
- 3 Cups Penne Pasta
- Grated or Shaved Parmesan
Method
- Bring a large saucepan of water to the boil.
- Cook the pasta per the instructions on the packet.
- Drain and set aside.
- In the same saucepan heat the olive oil and add the chicken, chorizo, zucchini and capsicum.
- Once the chicken is evenly coloured add the garlic and stir for 2 minutes.
- Then add the Pavs Pantry Cajun Seasoning and tomato paste into the mix, stirring it until the chicken is evenly coated.
- Once the chicken is coated add the cream and reduce the cream until it is a nice saucy consistency.
- Lastly stir through the pasta and serve.
- Garnish with as much parmesan as desired.
