Cajun Prawns and Fattoush Salad
Ingredients
Salad Ingredients
- 10 Cos Lettuce Leaves (shredded)
- 2 Large Tomatoes (diced)
- 1 Medium Lebanese Cucumber (sliced)
- 2 Radish (thinly sliced)
- Fresh Mint
- Fresh Parsley
- 2 Slices of Lebanese Flat Bread
Salad Dressing
- 1 Lemon (juiced)
- 2 tsp Sumac
- 1 tsp Salt
- 1/2 Cup Olive Oil
Prawns
- 12 Large Tiger Prawns
- 2 tbsp Olive Oil
- 3 tbsp Pavs Pantry Cajun Seasoning
Method
- Toast the Lebanese flat bread in a pre-heated oven or under the grill until nice and crispy.
- Set aside to cool.
- Whisk all the ingredients for the salad dressing in a bowl and set aside.
- In a large bowl mix all the salad ingredients tearing as many leaves of the mint and parsley as you like.
- Crumble the bread and toss through the salad.
- In a shallow pan add the oil and sear the prawns for about 3-4 minutes on both sides on a medium heat.
- Add the dressing to the salad and mix.
- Toss the prawns with the Pavs Pantry Cajun Seasoning and serve on top of the salad.
